  • Roasted carrots
  • Roasted shallots
  • Parsley
  • Toasted hazelnuts

(Briefly warm the lentils, carrots, & shallots before adding to greens)

Dressing:

  • Pumpkin puree
  • Olive oil
  • Toasted hazelnut oil
  • White wine vinegar
  • Balsamic vinegar
  • Dijon mustard
  • Honey
  • Thyme
  • Salt & pepper
