Speckled Black Beans & Bell Peppers


  • Red wine vinegar
  • Grainy Dijon
  • Salt
  • Smoked paprika

A dinner born of necessity is sometimes surprisingly filling, don’t you think? I had planned to enjoy these creamy speckled black beans with pan fried bell pepper strips & onions folded in. But I realized when I sat down to eat that I was hungrier than the portion on my plate, so I pulled some fresh spinach from the crisper that brought a delightful green crispness to the bowl. A quick toss with Dijon, red wine vinegar, and smoked paprika got the leaves ready to meld nicely with the sweet peppers & onions and super flavorful beans.  I had heated up the beans & peppers too, since I wanted a warm dinner and knew that wilting the greens slightly would give me that tummy-filled satiety I was craving.  This impromptu salad turned out to be just bright, warm, & spicy enough to lick my lips and say “ahhh”; definitely the kind of dinner that I’ll have to make again.
