White Bean Chili


December’s here and  nothing calls out to me more than a warm bowl I can wrap my hands around while I eat lunch (especially in light of the fact that the breakroom at work is always a touch on the chilly side, in my opinion).   A slightly creamy, tangy chili, with the subtle back-heat from oven roasted Hatch green chiles,  fits the bill this week to keep me warmer inside and out.  I’ve enjoyed every  comforting spoonful, as have my ever-cold hands.

The magic of this chili comes from:

  • Cannellini beans
  • Navy beans
  • Roasted yellow onion
  • Roasted Hatch green chiles
  • Garlic cloves
  • Serrano chile
  • Green onions
  • Spinach
  • Trader Joe’s Fire Roasted Corn
  • Quorn Chik’n chunks
  • Dijon mustard
  • Cumin, coriander, & oregano
  • Cilantro
  • Sour Cream
  • Lime zest & juice
  • Salt & pepper
  • Roasted pumpkin seeds, sprinkled on top when serving
