Golden Beets with Creamy Horseradish Dressing


Sweet, mildly earthy, and warm – golden beets are a true favorite.  Their bright orange hue provides a fantastic range of minerals & vitamins but also a brightness on the plate of sunshine captured, stored underground, and available in an unassuming, delicious root.  Roasting brings out the sweet flavor of just about any vegetables, yellow onions & golden beets in particular.  By warming the beets, onions, and marinated baked tempeh, it creates a hearty salad that is complemented with crunchy, steamed green beans, nutty toasted walnut halves, and a little sweetness from dried apricot bits scattered throughout.

A  Greek yogurt dressing, tangy & zippy thanks to horseradish & cayenne, brings the the whole salad together with a smooth, creamy coating and that bring out the best in all of the parts of this great winter salad.

  • Kale
  • Oven roasted golden beets
  • Oven roasted yellow onions
  • Green beans
  • Marinated, baked tempeh (marinate overnight in: White wine vinegar, Bragg’s Liquid Aminos, horseradish, honey, Za’atar, nutmeg & cayenne)
  • Toasted walnut halves
  • Dried apricots


  • Fat free Greek yogurt
  • White wine vinegar
  • Toasted walnut oil
  • Horseradish
  • Honey
  • Garlic
  • Cayenne
  • Za’atar
  • Dried coriander
  • Salt
  • Freshly grated nutmeg
  • Toasted walnut (just one)
  • Strips of lemon zest
