Creamy Ginger Coleslaw

on

  • Cabbage
  • Celery
  • Green onions
  • Quorn Chik’n Cubes (shredded)
  • Corn Nuts
  • Cilantro
  • Mint

Dressing:

  • Sour cream
  • Rice wine vinegar
  • Dijon mustard
  • Fresh ginger
  • Fresh garlic
  • Cilantro
  • Mint
  • Agave syrup
  • Coriander
  • Salt
  • Bragg’s Liquid Amino Acids

On a warm spring day, eating in the shade outside, a cool, crunchy slaw with a little ginger bite, fragrant springtime mint, and salty corn nuts, is a satisfying way to fill up the belly and take a break from the work-day busy-ness.

The sour cream adds a tangy sour note to dressing, and if I make this again, I will bump up the ginger, herbs, & coriander, since the sour cream’s tang overwhelmed them a little too much.  Green apple, radish, sugar snap peas, or jicama could also join the mix in a future variation.
