Spinach & Artichoke Hearts

I absolutely crave briny artichoke hearts!  With a limited amount of time for salad prep a few weeks back, I found myself relying, as I often do when crunched for time, on Costco.  A hug bag of washed spinach leaves, a 6 pack of red/yellow/orange bell peppers, and a tub of mini heirloom tomatoes served as the bulk of this salad.

For protein, hard boiled eggs are ready in the time it took to make up the dressing.  The only other hands on work was to roughly chop the kalamata olives (I love those almost as much as artichoke hearts) and peel the cooled eggs.

  • Spinach
  • Mini heirloom tomatoes
  • Bell peppers
  • Water-packed artichoke hearts
  • Hard boiled eggs
  • Kalamata olives

Dressing:

  • Tomato paste
  • Olive oil
  • Red wine vinegar
  • Smoked paprika
  • Balsamic vinegar
  • Pomegranate molasses
  • Dijon mustard
  • Crushed garlic clove
  • Turmeric
  • Ground coriander
  • Salt & pepper
